Royal Icing

Vanilla-Almond Royal Icing for Sugar Cookies

This vanilla-almond royal icing recipe gives your cookies a softer bite while still being firm enough to harden and package.
I absolutely love the vanilla almond flavoring, but this royal icing recipe also works well with other extracts. It also makes a great royal icing base that can be mixed with cocoa powder for a chocolate flavored royal icing.

Servings 36 Cookies

Ingredients
  

  • 1/3 cup Meringue Powder
  • 1/2 cup Water Room Temperature or Warm
  • 2 pounds Powdered Sugar
  • 1/4 teaspoon Cream of Tartar
  • 3 tablespoons Vanilla Extract Clear (if possible)
  • 2 tablespoon Almond Extract
  • 1/2 teaspoon Lemon Juice
  • 3 tablespoons Light Corn Syrup

Instructions
 

  • Mix 1/3 cup of meringue powder with 1/2 cup of water on high speed for about 2-3 minutes (or until frothy).
    1/3 cup Meringue Powder, 1/2 cup Water
  • Add vanilla extract, almond extract and lemon juice and mix on low-to-medium for about 30 seconds.
    3 tablespoons Vanilla Extract, 2 tablespoon Almond Extract, 1/2 teaspoon Lemon Juice
  • Slowly add powdered sugar and cream of tartar. Mix on medium for about 3-5 minutes, until fluffy.
    2 pounds Powdered Sugar, 1/4 teaspoon Cream of Tartar
  • Add corn syrup and mix on medium for approximately 1 minute.
    3 tablespoons Light Corn Syrup
  • This should give you a 15-20 second consistency. I like to use this consistency for outlining AND flooding. However, you can add more water to thin or add more powdered sugar to thicken (especially for details).
