How To Freeze and Store Fully Decorated Sugar Cookies with Royal Icing

Why would you want to store fully decorated sugar cookies? Freezing decorated cookies made with royal icing is a great way to preserve them and have them on hand for future events or gatherings. It’s also a convenient way to prepare cookies in advance if you’re short on time.

Personally, it allows me to set a reasonable schedule – I do all of my decorating in one week and then store them in the freezer to be pulled before their delivery dates. Also, for some strange and not-at-all scientific reason, I have found that my sugar cookies become softer and tastier after having been frozen and then defrosted.

Freezing the Cookies

  1. Allow the royal icing on your cookies to dry completely. This usually takes at least a few hours, but it’s best to give it a full day to ensure that the icing is fully set.
  2. Using a soft brush dedicated to cookie work, gently dust each cookie with cornstarch and let it sit for five (5) minutes.
  3. Individually heat seal each cookie. (This step is important to ensure the cookies defrost properly later).
  4. Place the individually heat sealed cookies into a larger air tight container and store in the freezer. You can gently stack them on top of each other, but I prefer to line them up vertically in the container if I can.

Defrosting the Cookies

  1. When you are ready to defrost your royal icing decorated cookies, simply remove them from the freezer and let them sit out at room temperature for a few hours.
  2. If you are defrosting the entire container, you can leave the cookies in the container until all of the condensation is gone from the outside of the container.
  3. If you are defrosting a partial order (heat sealed cookies only), you can open the container and lay the individually wrapped cookies on a flat surface until all condensation is gone from the outside of the heat-sealed package.
  4. When the cookies are defrosted and the condensation is gone, package your cookies as you normally would.
